Hotel Management (including Commercial Cookery/Patisserie)

For students wanting a career in Hotel Management with an emphasis on kitchen management, this two year packaged course covers all aspects of employment in this exciting global industry.
Moving from the practical to the theoretical and further to management issues, graduates will have a thorough knowledge of the intricacies of Food and Beverage Service, Front Office Management, and Commercial Cookery.

Qualification & Recognition

Students will complete two qualifications
Diploma of Hospitality Management (THH51202) &
Certificate IV in Hospitality (Commercial Cookery) (THH41302)
This course is nationally recognised under the Australian Qualifications Framework.

 

Recognition of Prior Learning (RPL) and Credit Transfer
You may be able to shorten the length of your chosen course by measuring your skills acquired through work or life experiences, or through qualifications obtained from formal studies or training. AQF Qualifications and Statements of Attainment, issued by any other Registered Training Organisation, will be recognised by the Institute. Areas of Study

Commercial Preparation of Food
This will include the hands-on preparation of all types of food: vegetables, meat and poultry, as well as seafood. You will learn about menu planning and balance. You will become an expert in the preparation of appetizers, main courses, desserts, breads and pastries; as well as buffet food and food which caters for special cultural and dietary requirements.
Kitchen Management
This will include planning and managing menus; managing a safe and hygienic kitchen; menu planning and preparation; managing costs and optimising revenues.

 

Food and Beverage Service
Learn to distinguish between good and bad service. What makes for "5 star" service? Learn how to manage a five star facility.

 

Front Office Management
Experience the very best in front office service. Learn about different front of house reservation systems.

 

General management
If you are starting out on a career in the hospitality industry, it is important that you develop your skills in management, marketing, accounting and information technology.
 

Entry Requirements

Diploma programs applicants will have completed Senior High School (Year 12 in Australia or the equivalent in their country of origin). Certificate applicants will have completed Year 11 or equivalent.
International Students: Entry into Certificate and Diploma programs requires an English level, at least equivalent to IELTS 5.5 or Upper Intermediate at a Holmes English Language Centre.

 

Students on a student visa MUST be enrolled in a full-time course.

Assessments

Theory and management classes are delivered through lecture format and practical tutorials. The commercial cookery component is taught in fully equipped commercial kitchens.
