Commercial Cookery - Hospitality (Certificate III)

This program prepares students for employment in the restaurant and hospitality industries. It provides the student with the hands-on practical training required for them to begin a successful career as a commercial cook as well as foundational skills for further studies in Food & Beverage supervision and Hospitality Management.

General Entry Requirements and Pre-requisites

All entry into this program is at Certificate III level and requires the equivalent of Australian Year 10 with passes in English or completion of the Certificate I in Retail Baking.

Note: The Certificate II is the first 6 months of the 1 year Certificate III program.


What You'll Learn in Each Course

In the Certificate III, the student is trained in preparing a wide range of meals including seafood, sauces, soups, vegetables, poultry, pastry, salads and cakes. The theoretical and practical training is undertaken in the industrial kitchens and training restaurant located on campus.

In the Diploma, the student is trained to work as a supervisor within a restaurant. Subject areas include preparing budgets, rostering staff, establishing procedures, training colleagues, developing operational plans and managing financial and work place documents.

In the Advanced Diploma, the student is trained to work as a manager within a restaurant. Subject areas include managing staff, monitoring staff performance, recruiting and selecting staff, managing financial operations and managing the physical assets within the restaurant.


Work Experience, Activities & Events

The TAFE colleges work very closely with the five star hotels and restaurants in Perth & Western Australia. As part of the course, the students are assisted in obtaining paid part-time employment with these hotels and restaurants. The hospitality industry in Western Australia is booming at the moment and there is plenty of work available in this area for well trained and motivated students.

It is recommended that students complete 200 hours of industry work experience during this course.

Note: International students will need to apply for a work permit through the Australian Immigration Department to obtain paid work in industry.


Career Outcomes

Graduates of the Cert III in Commercial Cookery can become assistants to Cooks and Chefs or gain other types of work in the Cooking industry such as in banquet or function facilities, cafes and catering. Graduates of the Diploma or Advanced Diploma of Hospitality can obtain work as Duty, Floor or Restaurant Managers. 


Further Study & University Options

Successful completion of the Cert III in Commercial Cookery will allow further study of the Diploma and Advanced Diploma of Hospitality (if these are part of the initial application).


Additional Program Costs (paid directly to the College)

Students should allow A$370/semester for material fees in the Cert III Commercial Cookery course. There are similar material fees for the other Hospitality courses. Students will also need to acquire an appropriate uniform, footwear and equipment.
